- 2 cups chopped, cooked chicken breast
- 2 cups rigatoni pasta
- 1 teaspoon salt
- 1 teaspoon dry ranch salad dressing mix
- ½ teaspoon garlic powder
- ½ teaspoon black pepper
- 1 (8 ounce) container sour cream
- 1 (8 ounce) package Neufchatel cheese
- ½ cup shredded sharp cheddar cheese
- ½ cup buffalo wing sauce
Boil lightly salted water in a large pot. Cook rigatoni in boiling water, stirring occasionally, until softened and firm enough to bite, about 12 minutes. Filter and keep aside.
Season the chicken with salt, ranch dressing mixture, garlic powder, and pepper. Set aside.
Meanwhile, combine sour cream, Neufchatel cheese, and Buffalo wing sauce in a large saucepan over low heat. Cook, stirring constantly, until well mixed, about 3 minutes. Add cheddar cheese and mix well until melted. Add the chicken and pasta and continue cooking until thoroughly combined and heated through.
